I just tried this, and my family loved it.
1 lb penne noodles (or other short chunky noodles, like rotini or fusilli)
1/2 lb brie or camembert cheese, cut into cubes (with the rind removed if your kids won't eat it, but fine to leave in)
4 medium tomatoes, coarsely diced
20-30 olives, sliced, pitted (choose according to your family's tastes - we like super spicy olives)
parsley
basil (fresh if possible, shredded)
Boil the pasta until al dente. Drain, and then immediately return the drained and steaming hot pasta to the pot. Add cubes of brie and stir; it will melt and coat the noodles in about 2 minutes. Stir in tomatoes, olives, parsley and basil. Serve with salad.
I'm thinking of experimenting with sundried tomatoes and perhaps feta instead of brie, although that won't be as deliciously creamy, but it would be a different sharp flavor. Super easy, it takes about 20 minutes start to finish, and only one pot (plus cutting board and knife) to clean.
