I make one using baby carrot foot- it is YUMMY (probably should be served as dessert)!! I don't have it w/ me, but I'll try to post it tomorrow, I"yH. just need the basic ingredients- flour, oil, sugar, vanilla, baking soda, baking powder, eggs, cinnamon, and 4-5 jars of baby food (stage 2) for a 9x13, or can be made into muffins/"cupcakes."

Avaigail, I had posted a recipe for one awhile ago here it is, 0613--I also use baby food for it...
This recipe can be served either as a cake or kugel. My friends husband doesn't like vegetables, so she uses this recipe as a disguise but she has to call it a cakenot kugel.
Servings: 15
Ingredients:
2 1/2 cup flour
1 1/2 cup sugar
1 tsp salt
1 tsp baking powder
2 tsp baking soda
2 4 oz carrot baby food jars.
5 eggs
2 tsp vanilla extract
1 1/2 cup oil
Medium can crushed pineapple ( optional)
Directions:
1. In One bowl combine the first five dry ingredients.
2. In the other bowl mix the remaining wet ingredients well.
3. Mix all together
4. Put into greased loaf pan/ 9 by 13 pan. { this recipe fits into 2 loaf pans) and bake at 350 for 45 minutes to a hour.

sorry forgot my recipe at home again! if you really need it for this shabbos, pm me for my phone # and you can give me a call. but I did just get a pumpkin muffin recipe that's good, too:
3 c. sugar
1 c. oil
3 eggs, lightly beaten
1 (15 oz) can pumpkin
3 c. flour
1 dash salt
1 tsp. baking powder
1 tsp. baking soda
1 1/2 tsp. cinammon
1 1/2 tsp. nutmeg
mix everything, bake at 350'. will make about 3 loaf pans or LOTS of muffins!

Although this comes too late for last week's kugel, maybe someone wants to use it for this Shabbos!
Carrot Kugel
1 ¼ c. flour
1 c. finely grated carrot (you can use the metal blade of the food processor)
¾ c. sugar
1 ½ tsp. baking powder
¾ c. oil
2 eggs
1 tsp. vanilla
1-1/2 hr @350. This is enough for a loaf pan. Double recipe for a tube pan. Enjoy!

Carrot Kugel (Freezes well) and really tasty!
4 eggs
2 C sugar
(beat eggs and sugar until fluffy)
Add & mix:
1 C oil
1 C flour
1 t baking powder
1 t baking soda
4 C (finely) grated carrots = about 2 pounds of carrots
Pour into greased 9X13 pan. uncovered. 1 hour at 350 degrees

CARROT PUFF (KUGEL)
from Choc. Moose
2 lbs. (bags) carrots, peeled & cut up
½ cup melted margarine
1 cup sugar
3 tablespoons flour
1 tsp baking powder
1 tsp vanilla extract
3 eggs
Cook carrots until tender; drain & mash. Add other ingredients and bake in 2 qt casserole dish for 30 minutes.
