Roasted Maple Sweet Potato Salad with Cranberries and Pecans

2 sweet potato
2 tablespoons oil
1/2 cup pure maple syrup
2 teaspoons honey
1 tablespoon cider vinegar
juice of half a lemon
1/3 cup pecans, toasted & chopped if possible
1/3 cup dried cranberries or craisins
Preheat your oven to 375 degrees, peel your sweet potatoes & then cube them. Toss with the oil or spray with Pam or the like. Bake for 15 minutes on a greased and/or lined baking sheet, until tender, about 15 minutes.
Whisk together the maple syrup, honey, vinegar, and lemon juice; pour the syrup mixture over the already-baked sweet potatoes, and toss around to make sure everything is coated.
Turn the oven up to 425 & bake for another 8-10 minutes until crispy & syrup mixture is caramelized.
Toast your pecans in higher rack in oven, if you haven't done so already, and then toss with sweet potatos & fruit.
Serves 4-5 and is good hot or cold !
