so, I bought too many peppers for yom tov, cant exactly return. what the heck can I do with em? any ideas? what side dishes can I add em in????
please help.

Roasted pepper salad.
Roast the peppers. Peel them after they're soft and black and slice them into strips. Add crushed garlic, salt, black pepper and vinegar. They'll stay good in the fridge for a couple of weeks because of the vinegar.

just cut them into chunks, sprinkle with olive oil and roast. yum!!!!! and colourful. whenever I make this it goes.
