I've heard of the whole wheat white flour but I've never tried it. How is it white? do they bleach it or what? Is it missing a part that doesn't make it dark?

Its called white whole wheat flour and its very healthy. When I make 6 lbs of Challah I do 5 lbs of reg. flour and 1lb (4 cups) of white whole wheat and it comes out delicious. I use it when I bake too-half reg. flour & half w.w.w. The kids don't even notice and its so much better for them. I was told you could substitute it for reg. flour in everything but I never tried it -to do fully w. whole wheat.

I was told it's great for w.w. challah. But I believe was told it's not fully w.w. - more like 60% w.w. and 40% regular white.

I've tried it. It's called winter wheat but it is whole wheat. It has a lighter taste compared to regular whole wheat. Best also makes a flour that is in one package and it is partly whole wheat and partly white wheat. It didn't come in a six pound bag. my recipe callse for 6 pounds so that is a problem for me.

I used this for my challah this week instead of king arthur and it seemed to be better, not as crumbly.
