I'd like to try to make my own, I go through so many bottles of the stuff and it's so expensive.
I found this instructional video.

It looks very simple, except for one thing - what on earth are vanilla beans, where do I buy them and do they need a hechsher? (ie are they processed in any way or is that how they are grown?)

I buy mine from my local spice merchant.
You can also order online... a quick google came up with tons of sites. Here's one http://www.organickingdom.com/-p-763.html
I use 4 beans for 1 liter of vodka, I also scrape the beans and drop the scrapings and the pods into the vodka and I never use it before 8 weeks have gone by... IMO 3 weeks is just not enough.

I get mine from Watkins every year, when I order my black peppercorns. You can get a really big one which saves you $$$$$.

The vanilla beans are cured after they are picked. This usually involves either ovens or sun-drying.
