Kholrabi is from the cabbage family, if I am not mistaken. So, maybe use cabbage? The issue is the water content. Kholrabi is a pretty firm vegetable, not sure how it's make-up will affect a recipe and what you have to do with an alternative vegetable.
You can't find kholrabi in the market? Here in Israel we get it year-round.

hm Tamiri ... you simply change the same quantity of veggie in the recipe ...
