and because of the issues this year with peanut butter...maybe throw them out!

GR and Tefila, why do you make the recipes with fewer eggs?
I was thinking of adapting this recipe by using oil and an extra egg in place of the margarine.

My peanuts are European. I wouldn't like to throw them out so fast, because kosher shelled peanuts are no longer available here. However, no one wants to eat them because they don't taste so great. Maybe I will takeh toast them before using.

I don't use margarine, just oil. I can't remember if I use more oil though, because I'm not sure if I'm remembering a single or double batch. I usually make a double batch since it goes quite fast around here.

I just made these using oil. they were still pretty dry after I mixed in all the liquid ingredients, so I added an extra egg rather than use more oil. they came out of the oven 15 minutes ago so they still need to firm up a bit, but yummmmmmmm. they are good! I used raisins and choc chips. they are a bit sweeter than I would like, maybe I'll leave out the regular sugar next time.

We just made them with the following modifications, thanks to previous posters!
used oil instead of margarine
eliminated white sugar, just used 1 c. brown sugar
2 eggs instead of 1
used half white and half whole wheat flour
used walnuts, but about 3/4 cup instead of one cup
reduced choc. chips to about 3/4 cup (it was more than enough, probably could even be less)
And now, for the verdict...
They were yummy! Thanks!

I like cake, cookies, and candy. Plain and simple.
I don't anymore bake for shabbos and eat it all myself, but
and it's a big but
BUt I do make whole grain, low fat small muffins for the family, and allow myself to eat one a day. Sometimes mini, sometimes larger, and not every single day either.
I allow myself a small amount of dried fruit and nuts - fun food, for sure, but part of a healthy diet if you plan for it. (I think of dried fruit as practically candy; it is sweet.)
I'd make and eat these granola bars. I'd just cut them really small, that's all.
As far as WW points, I don't know. But I DO know that a person needs some treats so they don't binge or forgo the whole eating healthy thing.

My daughter made these today. Left out the white sugar and the nuts. They came out very delicious! She'll be taking a container of these bars to camp tomorrow.
