A nutriitonist once told me something about eating before and after fasting--either protien before and carbs after or visa versa. Which is correct? Anyone have any ideas why? Thanks.

Protein is satiating, we always have both protein and carbs (whole grains, pasta and protein as a main dish) before the fast and carbs (like bagels and fruit) to break it.
