Don't forget the roasting the zro'ah and boiling the egg, just make sure you do all the seder plate stuff, in addition to shulchan aruch. AND DON'T FORGET TO open your matzo boxes to make sure you have enough whole ones. oh, and a cork screw if needed for the wine.

Same here. My kids don't want meat or chicken.I used to cook up a storm. But now for the seder all I make is a big pot of chicken soup. I serve the boiled chicken, with some pickle salad and applesauce. We do not eat fish, I make falshe fish[with ground chicken breast].I buy very little chicken/meat for Pesach. But no matter how much I bake it is never enough.
I also do almond brittle. Soft ices.

does anyone know if chicken cooked in a pot over the stove, in its own juices is considered roasted? I wouldn't think so, but reading this thread has got me wondering, and I know that I should ask

Roasted is roasted (grilled/broiled), SY. Not boiled and not baked.

Brittle is simply sugar and almonds. but you need a candy thermometer and it has to be a clear day.
My ices is a combination of lemon, orange juice with sugar and water. you boil it and freeze. then you proccess it so it stays soft.
If you want exact recipes, I will take out my pesach cookbook begining of next week.
