This is really nice for a weekday lunch or for Shalos Seudos
Bina Magazine
1 avocado, cut into chunks
2-3 hardboiled eggs, cut into quarters
1 cup cherry tomatoes or grape tomatoes, halved
1/2 tsp Kosher salt
freshly ground black pepper
1/2 small red onion, thinly sliced
Dressing:
1 Tbsp low-fat mayonnaise
1 tsp freshly squeezed lemon juice
1/4 tsp garlic powder (optional)
Mix the mayo with the lemon juice and garlic powder and set aside.
In a bowl, place the avocado, eggs, and cherry tomatoes. Add the dressing and mix lightly until coated.
Sprinkle with salt and pepper and top with sliced onions.
Serves 2

I do this w/ more avocado, no egg, and a can of hearts of palm.

I also make an avocado, tomato, hearts of palm, dill salad. No mayo.

As well as an avocado, tomato, red onion and fresh garlic salad. (No mayo.)
This is meant to be a meal in a bowl.
