I made my own and it dried up fine but then after a bit the thing turned purple! What did I do wrong? Anyone made potato starch from scratch?

well I used and and it didnt color anything purple so I guess it's not that bad! if anyone wants to know, the first recipe for crepes in the spice and spirit cookbook for pesach is really good! (used the purple stuff for it!)
a little note: the starch wasnt hard to make at all!

If I remember my chem class... it might be the oxidation of the starch?
