I would put the carseat outboard on either side -- that's where I put my infant carseat in our 8 seater Sienna -- UNLESS you can leave the side seat open, and put the baby in the middle.
You don't want to have to climb in to click in the seat too much by putting in the back row, and so either leaving the side seat open so you can lean and put the carseat (if it fits) in the middle row, middle seat (not sure if it will fit there in an Odyssey; I know the Sienna 8th seat is bigger) or putting the carseat right near either side door is your best option.

So put 2 boosters in the back, one in the middle row on the side, and then the carseat either right next to the booster in that row or on the other side...If you can put it right next to it, it will make it easier so the kids can climb into the back...

Does your back seat have the split seat? you can let the kids sitting in the back, go in through the trunk, if you fold down one seat

I have an 8-seater Odyssey-
I have the infant seat behind the passenger seat (just b/c of the drive thru for carpool is on the driver's side), and when I needed I fit a Britax Roundabout in the back centre with boosters on either side. There are extra narrow boosters around now that are even easier to fit in which my friend bought from http://www.thecarseatlady.com since one lady lives in her city. They are like $15.
