I bought last week tons of tomatoes on sale and now they're just starting to get bad. I would like to cook them quickly before they get even worse. I would like to make some sort of salad recipe for Shabbos. Any ideas????? TIA!!!!

Simmer them for a few hours with 2 peppers diced, and about 6 cloves of garlic chopped, a bit of sugar and oil. (I usually do this with 2 cans of whole tomatoes, so you might have to add some water, about a cup or two and cook out the liquid). Now you have Matbucha!

find my vegetable soup recipe somewhere on this site ... it starts with a bunch of tomatoes and is out of this world ...

put them in a food processor with some onions & fresh garlic then sautee in a saucepan with olive oil and spices (don't forget some salt) - makes a great pasta sauce

Make a big batch of turkey soup:

Turkey thighs
tomatoes
salt
pepper
water

Cover with lots of water and boil for an hour. Then simmer for 3+ hours more.

I read somewhere that you can freeze them and reuse them for sauces (like a meat sauce). not sure if you have to chop them first but I think you might

Candied tomatoes. Cut them in half, drizzle olive oil over each tomato (face up) and sprinkle sea salt. Bake on 500 for approximately 2 hours (depending on your oven), until it's candied.
