does anybody have a good recipe for penne ala vodke? I tried the one in the kosher pallate and it was NOT GOOD!!

Here's a basic recipe:
INGREDIENTS:
2 tablespoons olive oil
2 cloves garlic, minced
1 (28 ounce) can whole peeled tomatoes
1/2 cup chopped fresh basil
salt and pepper to taste
1/4 cup vodka
1 pound penne pasta
1 pint heavy cream
--------------------------------------------------------------------------------
DIRECTIONS:
In a large skillet over medium heat, cook garlic in olive oil until tender, 1 to 2 minutes. Stir in tomatoes, breaking up a bit with fork. Stir in basil, salt and pepper and simmer 15 minutes. Stir in vodka and cook 15 minutes more.
Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
Stir cream into sauce and cook 10 minutes more. Toss with hot pasta.

I would also LOVE to make this at home, since it's one of my favorite restaurant sidhes, but I wonder if there's a healthier alterative to the heavy cream-- I try to cook on the healthy side when I can!

Yes, but they don't have the same consistency as dairy cheese once it's melted.

It came to me in a dream last night... I like my vodka sauce more tomato-ey than creamy anyway, so I'll just add the cream at the end and only use a touch. I know, doesn't take a genius to figure out, but the idea didn't come to me initially.

There's a great recipe on the box of some brand of fettucini noodles, can't remember which one, but I tried it and it was good.
It's usually a combination of heavy cream, butter, and parmisian cheese.

Not a fan of Fettuccine Alfredo but this is the sauce I make:
Melt:
1 stick butter
Add:
2 cups cream
pinch garlic
pinch ground black pepper
Simmer for about 10 minutes until thick. When it reaches a good consistency add:
1/4 cup Parmesan cheese.
I sometimes fry sliced white mushrooms in butter and add the mushrooms with some fresh thyme to the sauce.
