How do you write Meylech (either may or my), as opposed to (Eli)melech?
Chil as opposed to (Ye)chiel?
also, Hersh vs Hirsh?

It depends in which context I'm writing it. Usually, one would spell Meilech just like Melech, since it's just a variant pronunciation, like Seider, Peisach, Seifer, Cheider.
If I would want to stress the ay/ai pronunciation, I would put in two yuds after the mem. Some people would add an Ayin after the Lamed, I personally wouldn't.
If a person is called "Chil", in all likelihood he would always spell out the full name in writing, again, unless the purpose is to stress the variant pronunciation, in which case you would write ches, yud, lamed, probably with an apostrophe in the beginning.
Hersh with an Ayin, Hirsh with a yud.
Since Yiddish spelling has varied throughout the generations, and also from community to community, you may find people with different opinions.

my parents spelled it Hirsch (AFAIK there aren't 2 names hirsch, no matter how they are spelled- it's the yiddish version of tzvi)

AFAIK when it's written in Hebrew alpha, it's almost always written the original way, Elimelech. I just spoke to someone whose husband is called Meilech. She says in Hebrew alpha he writes Elimelech as there is no way to write it that looks ok.

You meant to write a /mem/, right?
That's what she said. That technically that's how it's spelled in Yiddish, but it looks so weird that he either writes אלימלך or writes it in English.
