Ok I'm not sure I know how to do this right. Some questions I can think of now are:
1. When do I take off the dough
2. How much do I take off?
3. What to do with it?
4. When do I say the beracha? before taking off, during after..?
5. IS there anything else to say with it?
6. Anything else you can think of...

I take challah after the dough has risen once. I take a bit larger than an olive. (Kazais). About the size of a walnut. I say a bracha as I pull off the dough. I put it in a small piece aluminum foil and the straight into my oven which is warming up to bake my challah. You can say a personal tefilla at this time (the time I am putting in foil etc). My dough continues to rise for about 20 minutes and then I shape it and let rise again. I take the challah out it is nice and burned at this point and deposit in the garbage. It is covered with aluminum so I was told it was ok
I put in the challlah into oven and my house smells like shabbat. Gevaldik .
