Anyone know if I can make matbucha with yellow and orange peppers?

It's probably too late, but the only difference should be the color and not even that much because yellow and orange peppers are just as sweet as red. Green peppers might make it taste different because they're usually not as sweet.

Roast and peel the peppers first for an optimal matbucha. It will be yum. Oh, and lots of garlic....
