And here's what I'd learn not in any particular order
shulchan orech with the beis yosef and then on top of that shulchan aruch shel rav
tanach in depth with meforshim including the usual meforshim in a mikraos gedolos and also rabbeinu bachya and the shelah
chassidus maamorim in depth with an emphasis on internalizing it and incorporating it into our daily lives
medrash in the original texts
and after all that I still want to be able to read tzena urena as well

I'd want to go through Tanach again, but slowly, a bit from Torah, Neviim and Katuvim each day.
Then a short break for breakfast.
Then Mishanah
Then Gemorah
Rambam
and then I would like to take one halacha at a time, all the Halachot and really do concentrated learning on them, what this Rabbi said, what that one paskened, what the differences were and why.
THEN I would like to learn how to work with B'nei Noach, because I think my tafkid might be in that area.
