So I don't know whats wrong with me, but I have almost finished my whole Pesach menu already (usually I'm lucky if I have an idea of what to make for the seders). But, I realized my menu is very heavy on fleishigs.
I have potato leek soup for one milchig meal, tuna cheese quiche, and knishes, but that's it. I would use salad, but I've already got that planned to use up my left over soup chicken. Please help me with some other ideas!!

Here's my favourite which I make on EP for lunch every year (except if it's Shabbos!). Sorry, I don't remember it exactly, and it's in my locked away Pesach recipe book...
Boil potatoes. Add cottage cheese, milk, chopped parsley, chopped onion, chopped tomatoes, pepper.Cook for a little. Top with grated yellow cheese and serve - you can bake or cook this in a saucepan.
It's delicious and filling.

frittata or crustless quiche
blintzes with various fillings.
I wonder if gnocchi would work with potato starch or matza meal. If so, that with a nice tomatoe sauce and cheese.
