I know by our yeshiva we always have meat by a bris, but maybe that's different. Sorry I can't really help!

Some people won't serve meat at a bris. This is because many people are accustomed to drinking coffee with milk during the mid-morning, and they might forget that they ate fleishig at the bris.

I doubt that it's a halacha, but if you live in a society that has the custom of having coffee and a pastry mid-morning, that's going to be a problem if you wait 6 hours after meat and take your coffee light.

In some edot davka it is the cultural thing to eat. I doubt it is a problem.
