thanks for this recipe. The dounuts came out delicious like soft clouds of air.
the mocha icing was too coffee flavored for me so I added a tsp of cocoa and it was better.
I got about 50-60 medium no hole donuts.

Another question:
Do these freeze well, or are they still fresh the next day or 2?

My kids ate the leftovers today, but I wouldn't waste calories on it unless it was fresh. I did serve it many hours after making them though.

Can I just fry them and put in the filling after they're done?
and does anyone know how much fresh yeast to use for this?

You can fill it after, but it's simpler & neater this way.
I bought bakers choice, but there are much better ones. It was bad weather & I couldn't get further than the grocery. Try peppermill.

I have never been successful at donut making
They always come out raw in the middle and brown on the outside. I've tried 3 years in a row and now DH politely asked me to buy them.
I wish I could master the skill, I am usually a good cook and baker just donuts and cholent have failed me...

I also have a yummy baked donut recipe that needs a non-stick donut pan. A worthwhile $15 investment. Can be made parve.

I know this is probably a silly question, but if I want to fill the doughnuts with strawberry jam (jelly)- do I do it before or after I fry them? I see that OP put in custard before frying, but maybe jelly is different...any suggestions?
Thanks!!

Thanks!! | Afterward. Squirt them in with a pastry bag through a tiny hole on the side.

You can do it either before or after. I've filled them with jelly before too. Some people prefer to fill them after.

I can't ever leave a recipe well enough, alone so I used yours as a starting point but changed it a bit if anyone's interested, and it came out totally scrumptious!
I substitued one cup of whole milk for some of the water
I used one cake of fresh yeast
I added zest from a fresh lemon
I added about 2 tsp. of vanilla extract
I increased the sugar about 1/4 of a cup
I made mine in a regular donut shape (hole in the middle) and dipped them into melted chocolate (that I melted with a bit of margarine and milk, and a egg), and covered in colored sprinkles. The kids loved them, but worse so did I!
Btw, I took challah without a bracha
