Chocolate Raspberry Bars (I think from Family First)

Dough:
3/4 cup oil
2 cups sugar
3 eggs
3 tsp. vanilla sugar
2 cups potato starch
2 - 6 oz. bags ground almonds

Topping:
15 oz raspberry jam, softened
12 oz. chocolate chips (I like minis)
8 oz. chopped pecans

Preheat oven to 350. Combine all dough ingredients. Press into an 11 x 17 inch parchment-lined pan. Bake 20 minutes. Remove from oven.
Spread jam over dough layer. Sprinkle with chips and pecans. Bake 25 minutes more. Cool before cutting.

Wanted to mention that these were a big hit. We even liked them straight from the freezer. Really nice combination of flavors with the raspberry, chocolate and pecans.

Yes, everyone loved them here, too. Even without the two bags of nuts that were originally omitted from the recipe.

Yes, mine were also made without those nuts Smile That left the dough a little on the soft side, but the flavor was great. I'm sure with the nuts they dough will be much more substantial.
