I just shredded some chicken, added black beans that were smashed with garlic powder, cumin, oregano, salt and paprika and mixed with enchilada sauce. Made enchiladas with that on a tortilla with a spoonful of enchilada sauce, chopped scallions (checked), some pareve sour cream (great) and pareve cheese (OK and will try this recipe without it next time). Rolled them up and put into a pan with enchilada sauce (or tomato sauce) on the bottom and covered with more sauce and pareve cheese. Everyone except me sour cream hating child loved it!
