2 ¼ C oat bran
1 T baking powder
½ tsp salt
¾ C parve milk
2 eggs, slightly beaten
1/3 C honey
2 T oil
Bake 15-17 minutes on 425. |
Hope I don't sound like a total fool - but what is oat bran? Different than regular oatmeal?

Oatbran is like very finely ground oatmeal, with somewhat a higher fiber content. When eaten as a hot cereal, it's definitely more mushy, but very wholesome.

Bran is the hard brown outer layer of grains, it's essentially pure fiber. It's not the same as finely ground grains. People use it to boost their fiber intake, and as a laxative.

Bumping this up. I need an idea that has no or extremely low in carbs to have with my coffee. Also I am watching my cholesterol so no eggs (don't really enjoy only whites). TIA!

Sounds wonderful. Is it DYI? I would love to do that but I can't get fresh sushi around until eleven.

Yes, I usually make it. Just make rice the day before & keep a damp towel on it. Roll up as I need!

I'm addicted to granola bars with my coffee.
Other than that I might dunk a few biscuits in my coffee or spread some peanut butter on them .

Do you NEED extremely low carbs or are you jumping on the low-carb diet bandwagon? because if you make zucchini bread using whole wheat flour, with soy flour or flaxseed meal in lieu of eggs or egg whites in lieu of whole eggs and applesauce in lieu of part of the oil, plus some chopped cranberries if the spirit moves you, you have a delicious coffee-break snack that looks, feels and tastes like cake but is highly nutritious.
