I made some for Shabbos. I peeled it, cubed it, put it on a baking pan, sprayed on some oil, and baked it at around 400 until it started to brown, about 1/2 hour. Easy and so yummy!

You can roast with olive oil, fresh garlic, salt, and pepper. Just did that this week, and everyone loved it.

I do this but I also sprinkle some kosher salt on top before I put it in the oven.

I cube and roast it with splenda (you can use sugar) cinnamon and sprinkle on a bit of orange juice.

I really love butternut squash ravioli. I also love pumpkin curry and I bet butternut squash would work just as well.

Boil it, mash it and use it for pumpkin pie brownies.

I saute cut up onion w/salt for a min or two then add peeled and cubed butternut squash for another 5 min. (of course keep mixing) Then I add a half a cup of water and let it cook till very little water is left. I have been doing it for years and e/o always loves it. Some time I would put this with leftover rice and - YUM!

I made this recipe last week. YUM!!!
I went heavy on the pecans. It was necessary to roast around fifteen minutes longer. I plan on making this for Shabbos again. It was a big hit. This time I will roast the butternut squash about fifteen to twenty minutes before I add the apples.
I also made this at the same time.

I added honey when I made this for Rosh Chasonah. I substituted margarine for the butter with McCormick's butter flavor added.
Both recipes are good. The first is really good!!!!!
