Whats something nice I can get for my boss as an appreciation gift for Chanukah

In most offices nowadays, giving gifts among staff (including bosses) is frawned upon. If you want, I'd stick to a nice card with words of appreciation (for motivating/for professionalism/for being a great boss). Just avoid being perceived as too much of an apple polisher.

to receptionist and human resource head I give a nice box of home made cookies.
For direct manager and ceo I give a nice bottle of wine, I know its a considered extravagant, but I don't work in the office and they are exceptionally nice to me - so I feel it is appropriate.
For years I've given a former boss who now works in a parallel department, but in a more senior position. I feel like its getting old at this point, but am not sure how to stop giving it.
