I need to amke 2 salads for a chanuka party for people who are allergic to
fruits
nuts
peppers
tomatoes
egg (mayyonnaise)
I must respect thier needs.
any ideas????

a greek salad, you didn't mention dairy so I assume htat feta cheese is ok.

german potatoe salad its just mashed potatoes sauted onions and oil, salt and pepper its good.
spicy tomatoe salad is cherry tomatoes halved with some oil, oregano, salt and pepper, you can add some minced red onion.

-if avacados are o.k. how about guacamole. or a avacado salad
-oriental cabbage salad
-lettuce salad without tomatoes
-olive salad
-roasted eggplant salad
-three bean salad
-chummus

potato salad with the following dressing: (its more work than traditional mayo dressing, but well worth it!)
3tbsp (chicken) broth - mix with fingers so potatoes are coated
1 tbsp wine vinegar - mix with fingers again
3 tbsp veg oil - mix with fingers again
1/2 tsp black pepper, 1 tsp salt, 1/2 tsp confectioners sugar, 1 1/2 tsp hot mustard, 1/2 c red onion - mix
sprinkle 2 tbsp dried parsley
can adapt by adding other veg, eg corn, pickles...I skip the red onion.
delicious!

I usually don't put any of those veggies in my salads.
The main salad I make consists of:
lettuce
canned peas
canned corn
pickles
olives
avocado
cucumber
Dressing:
put garlic cloves, oil, vinegar, splenda, little bit of salt in the food processor
Another Dressing: teriyaki sauce, soy sauce, brown sugar, ginger powder, garlic in the food processor.

Cucumber salad.
3-4 english cucumbers sliced
dressing
1/2 cup vinegar
1/2 cup sugar
1 cup water
2 tbsp salt
Mix dressing well and pour over sliced cucumbers. Let sit overnight.
Mix well and serve.
You can add purple onions as a garnish before serving.

And the Crunchy Cole Slaw from The Kosher Pallette is always a big hit, just skip the nuts and noodles. Add in craisins or chinese noodles for an extra crunch.

She said they were allergic to eggs. So I guess chinese noodles would also be out.

Green bean salad from the balabusta cookbook -
1 can of green beans
1/2 can corn
red pepper, diced
can of sliced mushrooms
1/3 c vinegar
2 T oil
1/3 c sugar
salt
