Salads marinated in Vinegar

I am running an event on Sunday. I just spoke to the caterer and she said she is planning on making any vinegar based salads today tomorrow. Is that too soon? It seems like so far in advance! (Things like cucumber salad, tomato salad, etc.) I don't want to poison my guests! Mayo-based foods will be made on Friday morning. (Is that too soon, too?) Thanks!

I'm assuming they have access to refrigeration, right?

Besides, vinegar is a preservative!

Vinegar salads last at least a week. I always make them in advance inorder for them to have enough time to marinate.

don't caterers have to follow very strict food safety rules? I would trust her to know what she's doing. she also doesn't want to poison your guests...
