My dh is trying to eat healthy foods. He doesn't eat fish or dairy. Any ideas for healthy and delicious meals for dinner?

Does chicken or meat count as heathy? 95% of my suppers are made out of chicken. Can't guarantee they're all healthy (deep fried cajun schnitzel, for example) but most of them are baked and I consider reasonably healthy.
Side dishes - potatoes, rice, couscous, farfel, orzo, salad...
Soups, onion, mushroom barley, split pea, chicken....

Turkey meatballs, fleshig or veggie wraps, baked turkey. Chicken stew, baked chicken salad. Baked schnitzel, egg white omelette w different toppings, quinoa, fleishig pizza, arroz con pollo (rice and chicken -spanish style) vegetarian pizza, soups from different veggies and broccoli cream or butternut squash cream, beans and rice/quinoa. Shepards pie, salads w many topping combination (ex fruits, seeds,nuts) tacos, curry chicken, veggie burgers/cutlets. Chinese fried rice, fleishig lasagna, falafel, sometimes I just have a green smoothie for dinner.

Wow, flaishig every day, must be expensive for you?
We have only on shabbos (chicken and chulent only), and once during the week if there are leftovers. I specialise in thick veggie soups, a whole meal in a bowl.

do you want some parve options or just meat?
-baked falafel, fresh pita, homemade tehina and avocado relish
-frittata, baby spinach salad, warm crusty bread
-mushroom stuffed omelettes, tomato salad, toasted english muffins
-parve french toast with pure maple syrup, cubed melon
-egg and avocado salad, toasted baguette slices
