eat it with fresh mozzarella sliced with tomato slices and fresh basil. or you can make balsamic glazed veggies, I've seen recipes for that. you can also make grilled chicken breast with a roasted red pepper on a nice italian bread or roll and drizzle with balsamic.

For the balsamic reduction:

While the veggies are cooking, pour balsamic vinegar and honey in a small saucepan. Bring to medium heat, and cook for about 15 minutes, stirring often, until reduced in volume.
Remove from heat and allow to sit for about 10 minutes, or until thickened. The thickening will occur on its own – no need to stir.
When vegetables are done and still hot, put them in a big bowl. At this point, you can pour over the glaze, or put it in a gravy boat (or another dish) so people can serve themselves.

have never tried it...cant find kosher balsamic where we live...but seems easy enough. just pour over your usual roasted zucchini/onions/peppers/carrots mixture

oops sorry! it says

- 1 cup balsamic vinegar
- 1/2 tbsp. honey

and it suggests seasoning the veggies with salt,pepper,dried thyme, dried rosemary and a little oil before putting in the oven

oh heres one more idea I found

Ingredients

Boneless Skinless Chicken Breasts
1/4 cup of Balsamic vinegar
1/8 cup of brown sugar
Pepper
Instructions

In a bowl combine the vinegar and the brown sugar.
Season your chicken with pepper and place on the grill. When you flip the chicken, then baste your chicken with the vinegar mixture. (That way your basting brush never touches raw chicken)
Everytime you turn your chicken, baste it again with your vinegar.
continue doing this until your chicken is done (about 15 minutes)
Baste one last time before you remove it from the grill.

I love roasted butternut squash with balsamic vinegar.
cut up the squash (like in 1 inch cubes)
add diced shallots
drizzle with equal parts olive oil and balsamic vinegar (I usually use 2 Tbs each)
sea salt
roast until it smells good : )

you can also add this to cooked farro with some toasted chopped walnuts. yum yum yum.

It's really strong (and really delicious) so I use just a bit at a time.
But I love to make:
linguini grilled vegetable salad
bruschetta zucchini
balsamic crockpot chicken
portobello mushroom salad
romaine, grape tomatoes, balsamic vinagrette

I believe the 40 clove garlic chicken calls for balsamic vinegar.

Also, if you do a search for "balsamic" on imamother, a nice amount of threads with recipes and ideas come up.
