My 2 month old has poops that are olive colored and jelly consistency.
What could this mean?

Sounds normal. Baby poop is weird for the first year. As their gut develops it's own bacterial colony, the color and consistency will be changing. What you want to look out for is it being too loose or constipated. Other than that, don't worry too much.
Oh, and if it smells like toxic waste that would peel the paint off the walls, that's totally normal too. I could not believe that something so cute and delicious could produce such nasty smells!
