If you're in Brooklyn, there are a few takeout options and your dh can take pictures at the store and you can tell him which foods appeal to you.

I know you say you don't feel like eating and are forcing yourself to eat a tiny bit of salmon, I've been in that situation, the best thing I can suggest is to eat tiny bites more frequently. Refuah shleima!!

I really really wish I could. I am getting a headache from not eating.

You really need protein and carbs - Please ask your rabbi for a heter to eat kitniyot, they give it easily if there's a health reason - there are many kitniyot foods that could help you nutritionally.

Would like to third the recommendation for a shayla about kitniyos -- my friend got one from a RW chareidi rav and all she had was celiac.

Same for matzah ashira -- matzah made with juice/eggs so it's easier to eat, only allowed for the sick or elderly but you are sick so you probably don't even have to ask a shaila.

There are now OU-kitniyot and OU-matzah ashira certifications.

OP if you post your location maybe one of us could cook for you?

I was told that kitniyos doesn't apply at all for a choleh. That is why tylenol and other medications which contain kitniyos are not an issue, if you're taking medication you are a choleh and kitniyos is waived!

So if kitniyos is what you want, it is not a problem to eat it.
