I have a great crock pot one, but it wouldn't be good for a 3 day Yom Tov.
otherwise, this one can be either in a pan in the oven or on the stove.
put the silver tip roast in a huge pan. potatos, carrots, onions, mushrooms, and almost cover everything with water. pour in some red wine and olive oil, and squeeze a lemon in as well. use your measurements (I just shake till it looks right to me) of salt, pepper, fresh garlic, oregano, and a dash of parsley. cook on 300 for at least 5 hours, and it should be reheated if possible as the juices soak in.
about half way through, flip the roast, and make holes in it and pour the juice over it.
I have made it this way for years, and it gets so tender it falls apart and is juicy and everyone loves it got the recipe from MIL and altered it a drop.

I always use the rub from kosher by design-- you basically process shallots, garlic, some dried herbs and olive oil, rub it all over the meat and roast it. Always a hit!
