Help with corned beef

I made corned beef for yomtov, by boiling it for 2 hours with pickling spice, and then baking it for an hour with apricot jelly poured on top. My kids really didn't like it. Some didn't like the fruity apricot taste, and some didn't like the pickling spice. Now I have a lot of leftovers, which I really don't want to throw out. Any suggestions with how to doctor it up, so it'll taste delicious for dinner tonight? Thanx.

Do they like cold cuts in general? If so, I would rinse off the sweet sauce. We like our corned beef hot and salty.

Hiding doesn't usually work that well but after rinsing off you can heat in a shredded beef sauce (use your fave sauce or marinade that your family likes), shred and serve on warm baguettes with sauteed onions.

Because corned beef is made by pickling it for a week then cooking it.
The sauce is for reheating it or to serve on the side.
I’m really looking for a good recipe, btw.

Serve it on sandwiches.

It's all a matter of taste, truly. Is there a roast or baked beef recipe that your family really likes that's made with a sauce?
If not try half brown sugar and half ketchup, since it usually does not offend. Mix well and taste before putting the corned beef in the sauce. Make sure you like it, otherwise scrap it and start again with something else.
