We’re thinking of going for chol hamoed, though I haven’t found any shul in the area. Does anyone know if there is minyan there?

I believe Atlantic City has minyan. You can also post on godaven.com under temporary minyanim to see if you can get 10 tourists together there.

Cap may NJ? There is no minyan there but I love that town.

I've seen impromptu mincha minyanim in the parking lot of Cape May Whale Watcher when the trip is over.

It depends what you're looking for. Cape Cod has a lot more to do, but it's also farther away and also unlikely to have a minyan (you could check to see if Onset or Chabad there will have for Chol Hamoed, but I'm skeptical). If you're just doing a day trip, Cape May makes more sense. If you have more time, Cape Cod is beautiful and much more interesting.
