I don't have recipes per se but on chol hamoed I like to make beef stew in the crockpot. Also meatballs. Sometimes kielbasa, sauerkraut and potatoes.

How do you do meatballs in the crock pot?

Can you explain exactly how you make this? Sounds like something that can be prepped the night before and then put up in the morning rush before leaving

Chicken & potatoes
Slice potatoes in thin circles, slice an onion in half moons, toss together with olive oil, paprika, salt, garlic, pepper.
Put chicken pieces on top, drizzle olive oil and sprinkle same spices.
Comes out really soft and yummy!

Make mashed potatoes and use some of that as your binder when seasoning and forming the meatballs.
Whisk together a jar of marinara and a can of jellied cranberry sauce. Drop in meatballs; cover and cook 6 hours on low.

If you'd rather make homemade marinara with fresh tomatoes and your own natural seasoning and serve savory meatballs, I can post instructions.
This chicken is also delicious.

Does anyone have a meat recipe that can be made for shabbos/yuntif lunch in the crockpot without over doing it? It would be there for 17 or more hours!

Thank you! The yapchik looks great!
Does anyone want to share meat/chicken recipes that are made in liquid so they can be served at a Seder- but doesn't have tomatoes sauce or a very sweet sauce? Something savory I suppose that is ok for the Seder?

Google Pesach While You Sleep by Julie Hauser. (I wanted to send a link but it's taking too long to open.)
And on that same page is a kosher.com article on the concept. Not sure if it's based on the book or if there are other suggestions too.

I have a cousin who every night puts up a roast in the crockpot and has a fresh amazing meat by day.

Does she do this in advance if yuntuf and then reheats it for the meal? Or she does this on yuntif for the next day? It doesn't work so well with shabbos this year. And I can't imagine having any strength after the end Seder to put up some meat for lunch the next day...

Slice onions in rings, chop carrots and squash into medium size pieces, place in crock-pot with a drop of oil and seasoning. Place the drumsticks on top of veggies and cook for a long time on a low setting. enjoy!
