We did ours a few weeks ago- it gets done before the shopping list.
We also do it on a Google doc that we save year to year so it only needs minor edits

Was thinking of doing my menu today. I know the basic idea of what I will serve. But didn't write it all down. I shopped for my meat and chicken and shelf items already . I won't be cooking until next week so I will wait on purchasing the fruits and veggies until next week.

I made my menu last Thursday, made my meat order on Friday, and picked it up last night. I am turning my kitchen over on Monday, so I will start cooking Tuesday.

(My husband like roast and I like chicken/veal, so I make both chicken/veal and meat for each meal. I also like a few sides, and he generally makes some kind of potatoe- kugel, roasted, etc. for each meal)

Of course you have to do your menu first, otherwise how do you know what to buy?
I have my menus in a loose leaf with my recipes, along with all my other chagim menus. I used to have from as far back as 2012, but they got lost. Now I have from 2018.

mushroom kugel
2 large red onions, sliced
3 TBSP oil
2lb mushrooms, peeled and sliced
3 eggs
1/2 c Mayo
2 TBSP potato starch
2 TBSP onion soup mix (I replace with extra spices)
Garlic powder
Pepper
Preheat to 350, coat 9” round pan with oil
Heat oil, sauté onions u til soft, about 8 mins.
Add mushrooms, sauté another 2 mins.
In large bowl, combine mushrooms with remaining ingredients. Pour into pan, bake 45-60 mins.
butternut squash kugel
4 1/2lb butternut squash (I usually use one big one)
3/4 c oil
4 TBSP potato starch
1 1/2 c sugar (I put less, but I don’t measure)
1 c Mayo
6 eggs
2 TBSP vanilla
Cinnamon
Preheat to 450, line baking sheet with parchment paper (I usually skip that part), grease 9x13 (skip that too)
Cut squash in half, lengthwise. Discard seeds, place face down on baking sheet. Bake until soft, about 45 mins. Allow to cool.
Lower oven temp to 350
Scoop out squash and combine with remaining ingredients except cinnamon. Pour into pan, sprinkle cinnamon on top. Bake one hour.
baked tongue
3-5lb fresh (NOT PICKLED) tongue
1 medium onion, diced
2 tomatoes, diced
Mushrooms, sliced
Onion powder
Garlic powder
Water to cover
Place tongue in large pot. Fill with water. Boil, simmer for about 3 hours. Dump water, allow tongue to cool.
Slice as thin as you can, place into 9x13 pan. Add vegetables, spices, and water. Bake, covered, for a few hours.
(This one I got from my mother in law, and it didn’t come with an actual recipe) You can cook it on any temp over 350, and it should be very soft when it’s done.
veal with leek sauce
6 veal chops
3/4 c potato starch
2 TBSP olive oil, divided
Salt
Pepper
2 red onions, sliced in rings
2 stalks leeks, sliced
4 cloves garlic, sliced
1 1/2 c white wine
Preheat to 375, spray roasting pan
Sprinkle veal with salt and pepper.
Dredge each chop in potato starch.
Heat 1 TBSP oil in pan large enough to hold chops. Sear chops 2 mins per side, over high heat. Place in roasting pan.
Add remaining oil to pan. Reduce heat to medium, add vegetables, sauté 10 mins. Add wine, cook 5 mins.
Pour sauce over veal. Cover tightly, bake 1 hour.

Grease crockpot and then line with parchment paper so it stays in place.
First layer: meat and bones
Second layer: grated onion
Third layer: shredded potatoes
Fourth layer: lots of salt
Don't add any water, oil or eggs. Don't mix the layers.
Cover crockpot and cook on low for 20-24 hours.

Peel carrots and cut into fine julienne; place into a bowl. Add thinly slivered shallots, olive oil and lemon juice. Mix well and season with salt and and pepper until very tasty.
[I usually use fresh garlic, dill and scallions (lemony dill carrot salad) instead of the shallots, but I will be a guest where they don't use those on pesach.]
