I have a child who is allergic to raw apples but cooked apples are fine.
How do I make charoset like that?

I have a friend with the same allergy. He's allergic to all raw fruit.
The most allergic part is in the peel, so be sure to peel it first. Cut the apple into small pieces, and simmer in a little grape juice, or sweet red wine until the apple is done enough. Stir in your chopped nuts, and refrigerate until read to serve.

I always use apple sauce as the base. Add in some cooked chopped apples for texture. I add chopped nuts and wine.

You'll need less liquid. So use a good wine for flavor. Proceed as usual.
