Is it possible to use the veggies from chicken soup in blintzes? What can I do to them to make it tasty as a filling?

I've mashed up the sweet potato from the soup, added sauteed onions and salt to taste as a filling. But you should serve right away since it's water logged.
I like sauteeing lots of onion and garlic, adding the mix of veggies with water, blending and heating through, seasoning with lots of salt, until creamy and tasty. Makes a great veggie soup (if you didn't overcook it in your chicken soup).

What kind of soup? By creamy do you just mean thick (not much water) or do you add something else to it?
