someone mentioned that she coated the chicken with shredded sweet potato and fried it. She said it came out delicious - latke like. She did egg, potato starch - I am guessing you could skip this and then coated with sweet potato.

Well OP didn't tell us if someone is allergic to potato starch, doesn't use potato starch (or anything processed) or just doesn't like the way the shnitzel comes out. Therefore many of our suggestions might be irrelevant, but some might work.

My potato starch panko crumbs made my shnitzel so soft and mushy when reheated. I dont remember what I sued in the past, must have been matzah meal based. But reheated potato starch crumbs were gross, at least for me. Maybe that's why op doesn't want it.

I also x use potato starch. I do pan grill cutlets. Very good. Make the pot very very hot, add onions slices with drop oil. Add non breaded cutlets, or bread with beaten eggs, cover for 20-25 min.
