My local take-out offers a delicious side of tender juicy grilled veggies, that are full of flavor. It consists of portabello mushrooms, colored peppers and Squash, all cut in big chunks.
How can a replicate this at home using an oven? My vegetables usually come out dry.

My recipe is quite juicy
1/2 cup olive oil
1/2 cup lemon juice
1/2 cup soy sauce
1 clove garlic
salt and pepper.
Marinate not longer than 20 minutes. Grill on grill pan or bake on 400, tossing every 15 minutes.
