I'm trying to bake ahead for Shavuos and the stores are out of leben. Is there a substitute that won't affect consistency or taste of the finished product? How about vanilla yogurt?

What is the particular recipe? In Israel I use leben and yogurt interchangeably in baked and cooked products.

Maybe Greek yogurt or 5% goat yogurt?
Vanilla yogurt seems too sweet. Leben has some "bite" to it.

It's for a cheesecake. I completely agree that leben and vanilla yogurt are quite different. I just saw the suggestion on a website where someone asked for a substitute for leben in a cheesecake but since it didn't seem quite right I decided to post here.
Thanks for reminding me about Greek yogurt.

I think either the Greek yoghurt or some 5% gvina levana dilluted perhaps with a bit of milk. Both would give you that 'tang' with approimately the same amount of fat that Leben contains.

In that case I would probably use plain yogurt ( unflavored)
Not sure about the Greek yogurt as it is much thicker than regular yogurt.
