My best method for yom tov is to sprinkle with salt and pepper. Grill on both sides until only outside is done.
Before yom tov wrap on cookie sheet. Bake short time. Then leave in hot off oven or low temp oven until ready to eat. It’s always moist and has that grilled taste and isn’t hard to prepare and isn’t raw/red inside - my family liked it well done and this method works well.
