Help! Need easy ways to prepare

What would be most essential easy and traditional things to prepare for all the meals for a medium size family (me dh, more than 3 kids) to make it feel like yom tov. For various reasons I have so very little time to shop and prep and very limited space.
Also no gluten and prefer no unhealthy shortcuts-NO margarine, whip, etc.
Please help!!
(Most ready made things are problem due to gluten)
Yom Tov season just starting and feeling totally overwhelmed.

I find brisket and roasted veg to be the easiest
Also chicken with a lot of rough big cut veggies all backed together in one pan

Forgot to mention don't really like red meat.

A whole roaster chicken surrounded by root vegetables in one large pan.
No bake peanut butter ice cream pie.

Whole chicken breasts over presoaked rice, baked. Roast vegetables on a cookie sheet sized pan at the same time.
Baked apples (semi cored with middle sprinkled with cinnamon and brown sugar).

Pickled dark chicken rolled roast baked. Roasted sweet potato wedges. Large salad.
Poached peeled pears (whole with stem still intact) in the oven.

Sheet pan salmon, baby potatoes & green beans. Bought sorbet for dessert, with a mint leaf on top of each scoop.

Salmon

Pomegranate Lettuce Salad
Waldorf Salad
Simanim Salad

Chicken Soup

Baked Apple Chicken (put chicken in pan. Put apple slices on top, drizzle with honey. (I use apple pie filling, but not healthy.) Bake.)
Baked Breaded Chicken Strips with Honey Dipping Sauce (Cut shnitzel into strips and throw into bowl of eggs. Spray baking pan with oil, shake on GF cornflakes crumbs into thin layer. Put chicken strips on tray, pour more cornflakes crumbs on top. Bake on high temperature. Mix honey and soy sauce for dipping.)
Pomegranate Snap Peas (Grease pan. Pour bag of frozen or fresh snap peas, drizzle with oil, salt, pepper. Bake. Toss with purchased pomegranate seeds.)
Glazed Green Beans (Heat pan, add oil. Pour in bag frozen whole green beans. Drizzle with oil and honey, add some salt and pepper.)
