Meeting my MIL’s dear family friends over Sukkot, and they’ve asked me to bring Challot (for my part I really appreciate the opportunity to bring something that I know will be welcome), however they are vegan. They’re comfortable with non-vegan food in the home, so I will be bringing a Challah that I’m comfortable serving, but I’ve never attempted to make an eggless Challah before! I’ve a few ideas but I’m curious, has anyone successfully made a Challah without eggs?

I make this every week! (We are not vegan, just like crusty challah)
1.5c water
.25c sugar
.25c oil
1 tsp salt
4.5c flour
1 tbls yeast
I put in my bread machine in that order, and cook for around 40min at 350. The longer you leave it in, the crustier it gets.

I have had to do this numerous times for vegan family members. Water challah is delicious!
You can use plain water instead of eggwash, to give a bit more color on top. Good luck!

The portion control challah on betweencarpools.com is delicious. I made it with white whole wheat flour and I like it that way even more.

This challah recipe tastes like regular egg challah. My erev yk guests couldn't believe it was egg free. It's soft and fluffy and is a pleasure to shape.
5 cups warm water
5 T yeast
16 cups flour (I usually use 4 c whole wheat)
1.5 cups sugar (for tishrei I use part honey, though that might not work for vegans)
2.5 T salt
1 cup oil
Mix as usual, knead, rise, etc.
You can brush a mix of brown sugar and water on top to give a brown, shiny crust.
Bake at 375 for 20-30 minutes.

Pick one and go with it. These types of recipes kind of need an exact science.

I often make one or two of these in addition to regular challah. Not sweet at all and really great with dips. (or butter...) No kneading needed.

I've also had great egg free challah so its definitely possible.
