The Crunch of Almond Salad
from the Pupa cookbook a la the Moose
Salad:
lettuce, cut up, any kind or a mix
2 stalks celery, chopped; optional
1 bunch scallions, cut up
11 oz drained Mandarin orange segments
handdful of sugared, slivered almonds
Dressing:
1/4 cup oil
2 T vinegar
2 T sugar
pinch salt
pinch black pepper
Combine salad ingredients in bowl and toss. When ready to serve, add the nuts and dressing.
Makes about 6 servings.

(My daughter says "Scrump" as a shortened version of Scrumptious!)
