You say child is newly diagnosed; it's possible that it flew under the radar until now because she is not allergic to milder forms like soybean oil and/or soy lecithin. This happened to us, DD was fine until she had soy protein. Talk to your allergist about how to figure this out safely.
As someone else suggested, we stocked up on some processed foods at Pesach time because Ashkenazi hechsherim don't use soy for Pesach. That was before we realized that she was only reacting to soy protein. I'm happy enough to stay away from that because it's usually in unhealthier foods anyway.
