I made a slew of dips, eggplant, roast red pepper, tomato, garlic, olive tapenade. All were YUM but I would NOT do it again, because we ate twice as much shmura matza at those meals.
Live and learn.

Made a lamb roast for the very first time
It was really good, but you have to like the flavour of lamb
Also I made the brisket with cranberry jelly came out perfect
My tongue also came out VERY good
Just boiled with spices and then I made a vinegrette for it

Roast in Cranberry Sauce
1 tob rib roast, dekel roast or 1st cut brisket
1 can jellied cranberry sauce
3 tbsp. onion soup mix
garlic powder
Put meat into roasting pan fatty side up. Season generously with garlic powder. Mix together 1 can cranberry sauce and 1 package (around 3 tablespoons) onion soup mix. Spread over seasoned meat. Cover tightly with foil. Roast at 350 degrees for about 2-1/2 hours or until meat is beginning to get soft.
Remove from oven, cool overnight, and slice across the grain. Return meat to a roasting pan. Continue cooking (around 1 hour more) until meat is very soft.
Times will vary depending on size of roast.

We usually buy ketchup, but we weren’t able to this year, so I made some. I think it put in a little too much vinegar, but it pretty much smells like ketchup and for the one kid who tasted it said it tastes like it too. The only problem is the consistency. I don’t have the right tools to make it smooth and creamy. I would do it again even if it’s just used for cooking.

DH used our smoker for smoked fish this year (salmon in one pan, tilapia in another). It was really good.
I tried a Shabbos whole chicken in the crock pot using a stuffing made of Seder plate leftovers (saute onion and celery, add charoses, mashed potatoes, parsley, a little matza meal and a beaten eggs). It was so overcooked by Shabbos lunch that I couldn't tell if it had been any good, so I'm calling it a fail.

I tried new recipe from Whisk, chicken avocado stacks. It was awesome! I didn't have a stacker so used a glass to form. I would do it again, maybe buy a stacker next year.

Homemade ginger ale and lemon soda. I'd do it all year round. Naturally good.

I made ginger ale every pesach and my kids asked me why I didn’t do it this year. I didn’t feel like it.

Peel and cut 5-6 gingers into cubes and place into a pot with 1 cup sugar and 1 cup water. Boil and then simmer for 1 hour. Cool and keep refrigerated in container. I use a tablespoon to a cup of seltzer as needed.
