We made slime for the kids yesterday. Potato starch and dish soap.
No exact measurements just eye ball it.

What about as a binder for meatballs or breading for something that you want to fry or bake? You can also put it in tuna burgers.

We toss fruits in fruit crumble/cobbler with potato starch to avoid having it get runny

You can use it for anything for which you would use flour, using half as much potato starch as you would regular flour

I believe you can also substitute it equally for cornstarch.

It's officially 5/8ths potato starch for every 1 cup of flour... But it's actually not so easy to substitute in baking. If it was, we'd have a lot more pesach cake options.

How was the texture? I tried it with water per google and my kids were underwhelmed to say the least.

Right after we made it, it was super soft and fun to play with. After an hour it got crumbly so we put it in the freezer. Took it out today and the kids played for over an hour. It’s not exact slime but for sensory it works well.
You can check on YouTube for other slime recipes. I usually make with glue/baking soda/coloring/contact solution.:

it works as a substitute but ratio is not equally. I once learned it in cooking school and I don't remember it but it is different.
OP, note: potatoe starch thickens liquids but it's not heat resistant. Example: you thicken a liquid but if you continue to keep it on flame it will revert to being thin and liquid.
